Ingredients

  • 500 g + approx. 20 pieces of walnut halves
  • 200 g Flour
  • 1 TEASPOON Baking Powder
  • 1 package Vanillin sugar
  • 120 g Sugar beet syrup
  • 1 egg (size M)
  • 100 g Butter or margarine
  • 350 g Sugar
  • 250 g Whipped cream
  • 2 TABLESPOONS Rum
  • 3 TABLESPOONS Honey
  • 150 g Dark chocolate
  • 7-10 Tbsp Flour

Directions

    For the dough, finely grind 150 g of walnuts. Mix with flour, baking powder and vanillin sugar. Add syrup, egg and small pieces of fat and knead to a smooth dough. If the dough sticks too much, mix in some more flour. Divide into 3 pieces, wrap in foil, chill for about 30 minutes. Then roll out in portions on a floured work surface approx. 3 mm thick. Cut out approx. 100 cookies (approx. 3 cm Ø). Distribute on 2-3 baking trays lined with baking paper. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for about 8 minutes. Take out and let cool down. Chop 350 g walnuts for the filling. Melt the sugar until golden brown. Caramelise chopped walnuts in it. Add cream, rum and honey, bring to the boil and boil down for 5-6 minutes. Leave to cool a little. Spread the filling over half of the cookies and place a second cookie on top. If you like, you can also leave out the top biscuit. To decorate, chop the chocolate and melt in a hot water bath. Decorate the biscuits with melted chocolate and halved walnut halves
