Vegetable stew with sausages

Ingredients

Servings: 4
  • 300 g Broccoli
  • 300 g Cauliflower
  • 7-10 Tbsp Salt
  • 100 g Long grain rice
  • 2 red peppers
  • 1 Onion
  • 1 Garlic clove
  • 1 TABLESPOON Oil
  • 1 l Vegetable broth (instant)
  • 1 can(s) (212 ml) Vegetable corn
  • 4 Vienna sausage
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp grated nutmeg
  • 3 Stem(s) Lovage

Directions

    Clean broccoli and cauliflower, wash and cut into florets. Blanch both in boiling salted water for about 3 minutes. Rinse and drain the vegetables. Cook rice in boiling salted water according to package instructions.

    Clean and wash the peppers and cut them into fine strips. Peel and chop onion and garlic. Heat the oil in a pot. Sauté both in it. Add stock and bring to the boil. Add broccoli, cauliflower and pepper strips, simmer for about 10 minutes.

    Drain the corn. Cut the sausages into slices. About 3 minutes before the end of the cooking time, add the slices of sausage and corn to the stew. Season to taste with salt, pepper and nutmeg. Drain rice, let it drain and add to the stew.

    Wash the lovage leaves, pluck off the leaves and cut into strips. Arrange stew in bowls. Sprinkle with lovage.
