Vegetable stew with sausages

Ingredients

  • 200 g Meat Tomatoes
  • 300 g Broccoli
  • 1 small red and yellow peppers
  • 100 g Long grain rice
  • 7-10 Tbsp Salt
  • 1 Onion
  • 1 Garlic clove
  • 1 TABLESPOON Sunflower oil
  • 1000 ml Vegetable broth (instant)
  • 4 (80 g each) Vienna sausage
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp freshly grated nutmeg

Directions

    Wash and clean the tomatoes, cut out the stem base in a circle and carve crosswise on the opposite side. Blanch in plenty of boiling water for about 1 minute. Remove and immediately rinse in cold water.

    Clean and wash the broccoli and cut the florets from the stalk. Clean, wash and cut the peppers into strips. Prepare rice in boiling salted water according to package instructions. Peel onion and garlic and cut into fine cubes.

    Heat oil, add onion and garlic and sauté for about 2 minutes while stirring until translucent. Fill up with broth and bring to the boil. Add broccoli and bell peppers and simmer for 10 minutes. Peel, halve and seed the tomatoes and dice the pulp.

    Cut the sausage into slices. Add sausage and tomatoes to the soup 3 minutes before the end of cooking time. Season to taste with salt, pepper and nutmeg. Add cooked rice and arrange stew in bowls.
