Root vegetable stew with Kasseler

Ingredients

  • 600 g lean pork chop with bone
  • 2 Onions
  • 4 Stem(s) Thyme
  • 2 Bay leaves
  • 4–5 Carrots
  • 2 (approx. 300 g) Parsnips
  • 3 (approx. 250 g) Parsley roots
  • 7-10 Tbsp salt, pepper

Directions

    Kasseler wash and with approx. 1 1⁄2 l cold water in a big pot give. Peel and roughly dice the onions. Wash the thyme. Add 2 stems of thyme, onions and bay leaf to the smoked pork loin. Bring to the boil, cover and simmer over medium heat for about 45 minutes.

    Peel and wash carrots, parsnips and parsley roots and cut into slices. Add the vegetables to the pork loin after about 30 minutes. Dab the rest of the thyme dry and remove the leaves.

    Remove the cured pork, laurel and thyme stalks from the pot. Remove about half the vegetables from the pot as well. Puree the rest of the vegetables in the soup. Remove the meat from the bone and cut it into small pieces. Put it back into the pot with the thyme leaves and the vegetables.

    Let simmer again for about 5 minutes. Season to taste with salt and pepper.
