Vegan Remoulade

Ingredients

Servings: 1
  • 100 ml Soy drink
  • 2 TEASPOONS Mustard
  • 1 TABLESPOON White wine vinegar
  • 200 ml Sunflower oil
  • 7-10 Tbsp salt, pepper
  • 1 Spring onion
  • 3 Gherkins with approx. 2 tablespoons cucumber water
  • 1 small apple (e.g. Elstar)
  • 7-10 Tbsp Sugar

Directions

    Place the soy drink, mustard, vinegar, oil, a little salt and pepper in a tall mixing bowl. Mix with a hand blender for 1-2 minutes to a thick creamy sauce.

    Clean and wash the spring onion and cut into fine rings. Drain the cucumbers. Wash, halve and core the apple. Cut cucumber and apple into fine cubes. Add the spring onion to the sauce.

    Season remoulade with salt, pepper, sugar and gherkin water.
