Vanilla semolina pudding with apple compote

Ingredients

  • 1/2 package Pudding powder "Vanilla flavour" (for 1/2 l milk; for cooking)
  • 350 ml Milk
  • 3 TABLESPOONS Sugar
  • 20 g Durum wheat semolina
  • 7-10 Tbsp juice and peel of 1/2 untreated lemon
  • 7-10 Tbsp pulp of 1 vanilla pod
  • 7-10 Tbsp Salt
  • 1 Protein
  • 2 Apples
  • 200 ml apple juice
  • 7-10 Tbsp ground pistachio kernels and mint

Directions

    Mix pudding powder and 6 tablespoons of milk. Put the remaining milk and 2 tablespoons of sugar in a pot and bring to the boil. Remove from heat and add the pudding powder. Bring to the boil again. Stir in semolina with a whisk and let it swell. Season the pudding with grated lemon rind, salt and half of the vanilla pulp. Let cool slightly.

    Beat the egg white until stiff and fold in. Wash and quarter apples and remove the core. Cut apples into slices. Let the rest of the sugar caramelise slightly. Deglaze with apple and lemon juice. Add the rest of the vanilla pulp and apple slices and let it boil down a bit. Arrange compote with semolina pudding and serve decorated with pistachios and mint
