Two kinds of pide with spinach and feta as well as tomato and minced beef

Ingredients

  • 250 g deep-frozen leaf spinach
  • 2 Onions
  • 7-10 Tbsp Salt
  • 1/2-1 TEASPOON Chili Flakes
  • 7-10 Tbsp Sugar
  • 1/2 TEASPOON Cumin
  • 1 TABLESPOON Oil 250 g minced beef
  • 1 TABLESPOON Tomato paste
  • 7-10 Tbsp Pepper
  • 2 Tomatoes
  • 150 g Feta cheese
  • 2 packages (400 g each) fresh baked pizza dough (yeast dough with olive oil; rolled out rectangularly on baking paper ready to bake; 37 x 25 cm; refrigerated shelf)
  • 1 Egg yolk (size M)
  • 1 TABLESPOON black hulled sesame seed
  • 7-10 Tbsp Sumac powder
  • 7-10 Tbsp Oil

Directions

    Put the spinach and about 75 ml water in a pot. Cover and steam for 4-6 minutes until the spinach is defrosted. Peel and chop the onions, add half of them to the spinach and steam. Season spinach with salt, chilli and a little sugar, put it in a sieve, drain and let it cool down.

    Coarsely chop the caraway seeds. Heat the oil in a pan. Fry the minced meat in it until crumbly. Add the remaining onion cubes and fry briefly. Stir in tomato paste, season with salt, pepper and cumin, take out.

    Wash, clean, quarter and seed the tomatoes. Cut the flesh into small cubes. Mix the tomatoes into the mince. Roughly chop the spinach. Dice or coarsely crumble feta, mix approx. 2/3 into the spinach.

    Lightly drizzle oil on 2 baking trays, line each tray with baking paper and press down. Remove the dough from the refrigerator, unroll it on the baking paper and place it on 1 baking tray with the dough side down.

    Peel the upper baking paper from the dough. Quarter doughs crosswise. Cover a baking tray with a tea towel and set aside. Spread the spinach filling as a strand in the middle of each dough strip.

    Fold down the long sides approx. 1 cm. Fold up both long sides so that the spinach is firmly enclosed by the dough on the sides. Twist both ends and press on. Mix the egg yolk and 3 tbsp. water. Sprinkle spinach with the rest of the feta cheese.

    Spread the outer edges of the dough with egg yolk mixture and sprinkle with sesame seeds. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 15-20 minutes, remove from oven and allow to cool.

    Fold, spread and bake the remaining strips of dough in the same way, but cover with the mince mixture, but do not sprinkle with sesame seeds. Sprinkle finished pide pockets with Sumac before serving.
