Turnip soup with bacon

Ingredients

Servings: 4
  • 500 g Turnip
  • 250 g Potatoes
  • 250 g Carrots
  • 2 small onions
  • 40 g Butter or margarine
  • 7-10 Tbsp white pepper
  • 125 g streaky smoked bacon
  • 7-10 Tbsp Salt
  • 7-10 Tbsp grated nutmeg
  • 7-10 Tbsp Parsley

Directions

    Clean, wash and chop the turnip, potatoes and carrots. Peel 1 onion and also dice it. Heat 30 g fat. Fry the onions until transparent. Add vegetables and fry briefly.

    Season with pepper. Pour on 1 litre of water, add bacon and cook covered for 20 minutes. Cut remaining onion into rings. Heat the remaining fat and fry the onion rings in it until brown.

    Take the bacon out of the pot. Puree the vegetables in the soup and season with salt, pepper and nutmeg. Cut bacon into strips. Pour over the soup with the onion rings. Serve garnished with parsley.
