Ingredients

  • 500 g Broccoli
  • 7-10 Tbsp Salt
  • 1 package (450 g) frozen croquettes
  • 750 g Turkey filet
  • 12 discs Bacon
  • 7-10 Tbsp Java peppercorn
  • 2 TABLESPOONS Oil
  • 150 g Chanterelles
  • 150 g Mushrooms
  • 1 Onion
  • 250 g Whipped cream
  • 1-2 TABLESPOONS sauce thickener
  • 7-10 Tbsp white pepper

Directions

    Clean, wash and cut broccoli into florets. Cook in little boiling salted water for about 5 minutes. Bake croquettes in the preheated oven (electric cooker: 225 ° C/ gas: level 4) for 20-25 minutes.

    In the meantime, wash the turkey meat and pat it dry. Cut into 12 medallions. Wrap a slice of bacon around each medallion. Season with salt and pepper and fry in hot oil on both sides for 3-5 minutes.

    Clean and wash the mushrooms and cut them into small pieces according to size. Peel onion and cut into sticks. Drain broccoli and let it drain well. Remove medallions from the pan. Fry onion and mushrooms in the frying fat for about 5 minutes.

    Add the broccoli and warm up with it. Add cream and bring to the boil. Bind with sauce thickener. Season vegetables with salt and white pepper. Arrange three medallions each with vegetables and croquettes on a plate.
