Turkey filet on leek vegetables

Ingredients

  • 40 g Long grain rice
  • 7-10 Tbsp salt, white pepper
  • 50 g Apricots and 2 tablespoons
  • 7-10 Tbsp Juice
  • 200 g cleaned leek
  • 7-10 Tbsp or spring onions
  • 125 g Turkey fillet or cutlet
  • 1 tsp (5 g) Oil
  • 100 ml Chicken broth (instant)
  • 7-10 Tbsp vegetable binder
  • 7-10 Tbsp (suitable for diabetics)
  • 1/2 TEASPOON green pepper (glass)
  • 1 TABLESPOON chopped parsley

Directions

    Soak the rice in approx. 1/8 l boiling salted water for approx. 20 minutes

    Chop the apricots roughly. Clean, wash and cut the leek into rings

    Wash the meat, pat dry and cut in half. Fry in hot oil for 3-5 minutes on each side. Season and take out

    Sauté the leek in the frying fat for about 5 minutes. Stir in the apricots. Deglaze with stock and apricot juice, bring to the boil. Stir in binding agent and add peppercorns. Season to taste with salt and pepper if necessary

    Heat meat in vegetables. Drain rice if necessary and mix with parsley. Arrange everything
