Turkey roulades with grilled pears and crisp salad

Ingredients

Servings: 4
  • 600 g leaf spinach
  • 1 Onion
  • 2 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp grated nutmeg
  • 4 Turkey escalope (approx. 150 g each)
  • 120 g Goat cheese
  • 5 TABLESPOONS Olive oil
  • 2 firm pears
  • 100 g Breakfast bacon in slices
  • 5 TABLESPOONS White wine vinegar
  • 1 TABLESPOON grainy mustard
  • 7-10 Tbsp Sugar
  • 1 Head endive salad
  • 7-10 Tbsp wooden skewers

Directions

    Clean the spinach, wash it thoroughly and let it drain on a sieve. Peel and finely chop the onion. Heat 1 tablespoon of oil in a pan. Fry half of the diced onion in it, add the spinach and fry for about 3 minutes.

    Season with salt, pepper and nutmeg and leave to cool in a bowl. Tap the turkey escalope slightly flatter. Season with salt and pepper. Spread spinach on the meat. Crumble goat cheese on top.

    Roll up the turkey meat and pin it with wooden skewers. Heat 2 tablespoons of olive oil in an ovenproof pan. Brown the turkey rolls all around. Bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 10 minutes.

    Wash the pears, rub them dry and cut them into approx. 5 mm thick slices. Heat 1 tablespoon of oil in a grill pan, grill the pear slices briefly on both sides, remove from the pan and keep warm.

    Cut the bacon into strips and roast them in a pan without fat. Remove from the pan and drain. Heat 3 tablespoons of olive oil in the bacon pan. Fry the rest of the onion cubes in it. Add vinegar and mustard and season to taste with sugar, salt and pepper.

    Pour into a bowl and allow to cool. Wash the salad, dab dry and tear into pieces. Mix the salad with the sauce and arrange on plates. Arrange pear slices, bacon and roulades on top and serve immediately.
