Ingredients

  • 1 Turkey fillet (approx. 350 g)
  • 1 Onion
  • 1 Bay leaf
  • 100 ml White wine
  • 7-10 Tbsp Salt
  • 200 g yellow and green zucchini
  • 1 Lime
  • 30 g Walnut kernels
  • 3 TABLESPOONS Walnut oil
  • 2 TABLESPOONS Raspberry vinegar
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp some flowers Nasturtium

Directions

    Wash the turkey filet and dab dry. Peel onion. Bring the meat, onion, bay leaf and salt to the boil with wine and 400 ml water and let it simmer at low heat for 15-20 minutes.

    Take out and let it cool down. In the meantime, wash the zucchini and cut or slice them into thin strips. Cut lime into thin slices. Coarsely chop the nuts. Mix vinegar, salt and pepper and add oil.

    Cut the meat into thin slices. Distribute on four flat plates. Add zucchini and walnuts. Pour the marinade over them and garnish with slices of lime and nasturtium flowers.
