Potato salad with smoked salmon

Ingredients

  • 800 g Potatoes
  • 7-10 Tbsp Salt
  • 1 Shallot
  • 2 stem(s) Dill
  • 4 TABLESPOONS White wine vinegar
  • 7-10 Tbsp Pepper
  • 1 pinch Sugar
  • 6 TABLESPOONS Olive oil
  • 1 small bunch of radishes
  • 400 g Smoked salmon
  • 150 g Rocket

Directions

    Wash the potatoes thoroughly and cook in salted water for about 25 minutes. Drain, let it steam and peel. Cut cold potatoes into larger pieces. Peel and finely dice the shallot. Wash the dill and dab dry.

    Pluck off small twigs. Mix dill, shallots, vinegar, salt, pepper and sugar. Add oil drop by drop. Mix the potatoes and vinaigrette and let it steep for about 30 minutes. Clean, wash and slice the radishes. Cut salmon into strips. Clean the rocket and wash it thoroughly. Mix the prepared ingredients. Bundle the rocket as desired and wrap with salmon strips.
