Wash the meat, dab dry and cut into pieces. Peel onion and cut into strips. Heat the oil in a frying pan. Sauté the goulash in it in portions. Add onion and fry. Season goulash with salt, pepper and paprika. Sauté flour in it, add apple juice and broth. Add bay leaf. Cover and cook for about 10 minutes
Place the sauerkraut in a sieve, rinse briefly and drain well. Wash the apple, quarter it and remove the core. Cut apple quarters into slices. Add the sauerkraut and apple slices to the goulash, braise for another 10 minutes
Wash the thyme, shake dry and chop the leaves coarsely. Cook the dumplings in boiling salted water for about 7 minutes. Add thyme to the goulash, season with salt and pepper. Drain the dumplings. Arrange goulash and dumplings on plates
