  • 125 g Apricot Jam
  • 2 Zucchini (ca. 175 g)
  • 800 g Turkey escalope
  • 4 TABLESPOONS Brandy
  • 6 TABLESPOONS white balsamic vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 5-6 (20 g each) thin slices of cottage ham
  • 4 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Lemon Pepper
  • 7-10 Tbsp Coriander green
  • 18-24 wooden skewers

Directions

    Pass the jam through a fine sieve. Clean, wash and cut the zucchini into pieces. Wash the flesh, dab dry and cut into small cubes. For the marinade mix jam, brandy and vinegar. Season with salt and pepper. Place the meat and zucchini in the marinade, cover and leave to marinate at room temperature for approx. 30 minutes. Cut ham slices into 4 strips each and fold them together. Pour meat and zucchini into a sieve, drain well. Put zucchini, meat and ham on skewers. Heat oil in 3-4 portions in a large pan, add skewers and fry them one after the other for about 5 minutes, turning them over. Season with salt and pepper. Keep warm. Arrange three skewers sprinkled with lemon pepper in small portion bowls. Garnish with coriander
