Pour boiling water over the glass noodles and let them swell for about 10 minutes. Wash the asparagus, cut off the woody ends. Cut the asparagus lengthwise into strips with the asparagus peeler. Fry in 2 tbsp. hot oil for about 4 minutes, salt and remove.
Fry the minced meat in the frying fat until crumbly. Peel and chop the ginger. Wash and clean spring onions and cut into rings. Fry both briefly. Season with salt and pepper.
Mix lime juice, fish sauce, honey, chilli and 3 tablespoons of oil. Mix drained noodles, asparagus, minced meat and sauce. Wash and chop the coriander and sprinkle over it.
