Ham fusilli with spinach sauce

Fresh leaf spinach, parmesan, garlic and cream can be pureed easily and quickly. The advantage of spiral noodles: they absorb a lot of the spicy sauce in their grooves.

Ingredients

Servings: 4
  • 7-10 Tbsp Salt
  • 600 g young leaf spinach
  • 2 Garlic cloves
  • 100 g Parmesan (piece)
  • 100 g thin slices of raw ham
  • 400 g Spiral noodles (e.g. Fusilli)
  • 1 TABLESPOON Olive oil
  • 200 g Whipped cream
  • 7-10 Tbsp Pepper and nutmeg

Directions

    Boil up plenty of salted water for the pasta. In the meantime wash and drain the spinach. Peel and chop the garlic. Grate 75 g Parmesan finely. Slice 25 g parmesan. Roughly pluck the ham. Cook pasta in boiling salted water according to package instructions.

    Heat the oil in a pot. Sauté the garlic in it. Approx. 3⁄4 Add spinach and let it collapse. Add cream and approx. 100 ml pasta water. Puree the spinach with a hand blender. Stir in grated parmesan. Season to taste with salt, pepper and nutmeg.

    Drain the pasta, mix with the spinach sauce and the rest of the spinach. Sprinkle with ham and parmesan.
