Ingredients

  • 300 g Spelt flour (Type 630)
  • 7-10 Tbsp Salt
  • 10 g Yeast
  • 1 TEASPOON Sugar
  • 3 TABLESPOONS Olive oil
  • 200 g young leaf spinach
  • 1 red pepper
  • 2 red onions
  • 1 Garlic clove
  • 7-10 Tbsp Pepper
  • 300 g Fresh cream
  • 7-10 Tbsp Flour
  • 150 g Feta
  • baking paper

Directions

    For the dough put flour and 1⁄2 TL salt in a bowl. Stir yeast with sugar until liquid and add to the flour. Add approx. 175 ml lukewarm water and 2 tbsp. oil and knead everything with the dough hooks of the mixer to a smooth dough. Cover and leave to rise in a warm place for about 1 hour.

    Wash and sort spinach. Clean, wash and cut the peppers into strips. Peel onions and garlic. Cut onions into fine rings, chop garlic finely.

    Heat 1 tablespoon of oil in a frying pan. Sauté the garlic in it. Add the spinach and let it collapse. Season with salt and pepper. Season crème fraîche with salt and pepper.

    Quarter the dough and roll each portion out oval on some flour. Place the flat cakes on two baking trays lined with baking paper and spread with crème fraîche. Cover with paprika, onions and spinach. Crumble feta over it. Bake one after the other in a preheated oven (electric cooker: 230 °C/circulating air: 210 °C/gas: see manufacturer) for about 15 minutes.
