Tournedos with creamed mushrooms

Ingredients

Servings: 2
  • 200 g Mushrooms
  • 1 small onion
  • 2-3 (350 g) large potatoes
  • 7-10 Tbsp salt, white pepper
  • 2 Beef fillet steaks (approx. 150 g each)
  • 2 discs Bacon
  • 2 TABLESPOONS oil, 1/8 l clear broth
  • 100 g Whipped cream
  • 2 TEASPOONS sauce thickener
  • 7-10 Tbsp Chervil and pink berries

Directions

    Clean the mushrooms, wash if necessary and cut into slices. Peel and finely chop the onion. Peel, wash and roughly grate the potatoes. Season with salt and pepper

    Dab steaks dry and wrap with bacon. Tie with kitchen string. Fry steaks in 1 tbsp. hot oil at medium heat for approx. 8 minutes. Turn from time to time

    Heat 1 tablespoon of oil in a coated frying pan. Form approx. 4 medium sized Rösti from the potato mixture with a tablespoon. Fry on both sides until golden brown

    Season steaks and keep them warm. Sauté onion and mushrooms in frying fat. Deglaze with stock and cream. Bring to the boil and simmer for about 3 minutes. Season sauce to taste and thicken if necessary. Arrange everything. Garnish with chervil and pink berries
