Grate cheese. Put a tablespoon aside. Mix the remaining cheese and crème fraiche. Clean and wash spring onions and cut into rings. Put a tablespoon of spring onions aside for garnishing. Drain the chillies and cut into rings. Grease an ovenproof dish (27 cm Ø, 3.5 cm high).
Put the tortilla chips, spring onions and chillies into the dish. Spread the cheese crème fraîche evenly over the top, sprinkle with the rest of the cheese and bake in a preheated oven (electric range: 200 °C/ gas: level 3) for approx. 15 minutes. In the meantime peel and finely dice the onion. Pour the paprika onto a sieve, drain and then puree. Mix onions, pureed paprika and salsa. Sprinkle crisps au gratin with remaining spring onions and serve garnished with chillies and parsley as desired. Serve salsa extra in a small bowl
