Peel and chop the onion. Core, wash and finely chop the chilli. Finely dice the bacon and fry it crisply in hot oil. Fry onion and chilli briefly. Add tomatoes and juice, mash well and simmer open for about 15 minutes. Stir from time to time. Add herbs, season with salt, pepper and sugar
Wash the fresh tomatoes and dice them. Add to the sauce and simmer for another 5 minutes. Season to taste
