Tomato medallions

Ingredients

  • 40 g ribbon noodles
  • 7-10 Tbsp salt, white pepper
  • 2 (70 g) small medallions of pork
  • 1/2 tsp (3 g) Oil
  • 2 (30 g) cleaned spring onions
  • 1 (90 g) medium scaled tomato
  • 2 Apricot halves (tin; possibly for diabetics)
  • 1 gesch. garlic clove
  • 1/2-1 TEASPOON pickled green pepper
  • 8 TABLESPOONS Tomato juice

Directions

    Cook the pasta in boiling salted water until al dente. Drain. Fry meat in hot oil for about 2 minutes on each side. Season, keep warm. Chop vegetables and apricots, chop garlic. Fry everything in the frying fat.

    Add green pepper and juice and braise for 5-8 minutes. Season to taste, arrange.
