Tomato bites with sourdough bread and herring

Ingredients

Servings: 4
  • 1 Garlic clove
  • 4 discs Sourdough bread (à approx. 75 g)
  • 200 g red + yellow cherry tomatoes
  • 1 Onion
  • 5 TABLESPOONS Oil
  • 1 TABLESPOON demerara sugar
  • 1 TEASPOON Fennel seed
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 (approx. 260 g) ready-to-cook green herring fillets
  • 4 TABLESPOONS Breadcrumbs
  • 1 TABLESPOON Butter

Directions

    Peel and halve the garlic. Rub slices of bread with the clove. Chop the garlic. Wash, clean and halve the tomatoes. Peel and chop onion.

    Heat 1 tablespoon of oil in a frying pan. Fry the tomatoes, garlic and onion for about 1 minute. Sprinkle with sugar and fennel and fry for another 1-2 minutes. Season with salt and pepper

    Wash the fish, dab dry a little, turn in breadcrumbs. Heat 2 tablespoons of oil and butter in a large frying pan. Roast the slices of bread in it from both sides until golden brown, remove. Heat 2 tablespoons of oil in a hot pan. Fry the fillets on both sides until crispy. Drain on kitchen paper. Arrange slices of bread with tomatoes and fish
