Ingredients

Servings: 4
  • 1 kg baby potatoes
  • 300 g red peppers
  • 1 collar (approx. 175 g) Spring onions
  • 50 g streaky smoked bacon
  • 1 potty Thyme (or 1/2 bunch)
  • 2-3 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper

Directions

    Wash the potatoes and cook in boiling water for about 20 minutes. In the meantime, clean and wash the peppers and spring onions. Cut the bell peppers into pieces, the spring onions into rings. Dice bacon finely. Wash the thyme, dab dry and remove the leaves from the stalks. Drain potatoes, rinse with cold water and peel.

    Leave the bacon in a large pan until crispy and take it out. Add oil to the hot bacon fat and fry the potatoes in it while turning them golden brown. After half the frying time add paprika and spring onions. Finally add thyme and season the potatoes with salt and pepper. Fold in bacon and arrange the potatoes on a plate
