Thuringian potato salad with Thuringian Rostbrätl and Thuringian sausages

Ingredients

Servings: 6
  • 400 g + 1 medium sized onion
  • 6 discs Pork neck (approx. 200 g each)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp black pepper
  • 6 Tl + 1 tablespoon medium hot mustard
  • 100 ml pale ale
  • 1 kg waxy potatoes (e.g. Nicola)
  • 200 g Gherkins
  • 1 TEASPOON Instant vegetable stock
  • 3 TABLESPOONS Oil
  • 1 pinch Sugar
  • 1 (150 g) Apples
  • 1/2 bunch Dill and parsley
  • 100 g Salad Mayonnaise
  • 1 TABLESPOON clarified butter
  • 6 Thuringian grilled sausages (approx. 100 g each)

Directions

    Peel 400 g onions and cut into rings. Wash the meat and dab dry. Season on both sides with salt and pepper and spread 1/2 teaspoon of mustard on each side. Line the bottom of a flat pot with about 1/4 of the onions. Put 2 slices of meat on top and sprinkle with 1/3 of the beer. Put 1/4 of the onions and 2 slices of meat on top. Drizzle 1/3 of the beer on top.

    Place 1/4 of the onions, 2 slices of meat, the rest of the beer and the rest of the onions on top. Cover and chill for at least 8 hours. Wash potatoes thoroughly and cook in boiling water for about 20 minutes. Drain, rinse with cold water and peel. Peel and chop 1 onion. Drain the gherkins and collect the stock. Mix stock with 250 ml hot water and onion. Stir in oil, 5-6 tablespoons of gherkin stock and mustard, season with salt, pepper and sugar. Slice the potatoes, mix with the stock and let it soak for at least 1 hour. Dice cucumbers. Wash, quarter, core and dice the apple. Wash herbs, dab dry and chop finely. Mix cucumber, apple, herbs and mayonnaise into the salad, season to taste. Drain meat well.

    Stir in oil, 5-6 tablespoons of gherkin stock and mustard, season with salt, pepper and sugar. Slice the potatoes, mix with the stock and let it soak for at least 1 hour. Dice cucumbers. Wash, quarter, core and dice the apple. Wash herbs, dab dry and chop finely. Mix cucumber, apple, herbs and mayonnaise into the salad, season to taste. Drain meat well. Heat clarified butter in a pan. Add onions and pickle stock, braise on medium heat for 10-15 minutes until onions are golden brown. Turn several times. Grill the meat and sausages on a hot grill, turning for 8-10 minutes. Serve potato salad with sausages and meat. Serve onions with meat. Mustard tastes good with it

Grill the meat and sausages on a hot grill, turning for 8-10 minutes. Serve potato salad with sausages and meat. Serve onions with meat. Mustard tastes good with it
