Ingredients

  • 100 g soft butter
  • 80 g demerara sugar
  • 1 TEASPOON Christmas stollen spice
  • 1 pinch Salt
  • 75 g light sugar beet syrup or liquid honey
  • 1 egg + 1 egg white (size M)
  • 275 g + some flour
  • 1 coated Tsp Baking soda
  • 1 coated Tsp Baking Powder
  • 1 TEASPOON + 1-2 tablespoons lemon juice
  • 200 g Icing sugar
  • 7-10 Tbsp blue food colouring
  • 7-10 Tbsp light blue sugar pearls
  • baking paper
  • 2 small plastic bags

Directions

    Cream butter, brown sugar, spice and salt. First stir in syrup and then 1 egg. Mix 275 g flour, baking soda and baking powder and knead into the mixture. Cover and chill for about 1 hour.

    Roll out to a thickness of about 4 mm on a little flour, cut out polar bears (about 9 cm long). Place on baking trays lined with baking paper. Bake in a hot oven (electric cooker: 175 °C/ convection oven: 150 °C/gas: level 2) for about 8 minutes. Cooling down

    Beat 1 egg white, 1 tsp. lemon juice and icing sugar until creamy. Take off 1/3. Stir the rest of the icing thinly with 1-2 tbsp. lemon juice. Colour 1-2 tbsp. thick icing light blue with food colouring. Pour thick white and light blue icing into 1 plastic bag each, cut off a small corner each. Spray light blue and white contours on the bears, let it dry a little bit. Paint with thin cast. Decorate with beads, dry. Paint blue noses and let them dry
