Drain the capers and chop finely. Peel shallots and cut into fine cubes. Knead half the diced shallots, capers, except for something to garnish, and egg yolk with the minced meat.
Season to taste with salt and pepper. Divide into 4 portions, sprinkle with remaining onion and capers and arrange on plates. Garnish with caper apples. Serve with brown bread.
