Roasted onion minced steaks in chanterelle cream

Ingredients

  • 50 g Chanterelles
  • 1 medium onion
  • 500 g minced beef
  • 1 Egg
  • 2 TABLESPOONS ready roasted onions
  • 4 TABLESPOONS Breadcrumbs
  • 1 TABLESPOON medium hot mustard
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 8 discs Breakfast bacon (Bacon)
  • 2 TABLESPOONS Oil
  • 200 g Whipped cream
  • 1 TEASPOON grainy broth
  • 3 TABLESPOONS sauce thickener
  • 3 Stem(s) Parsley

Directions

    Clean the chanterelles, wash briefly and drain well. Cut large chanterelles smaller. Peel and finely chop the onion. Knead minced meat, egg, fried onions, breadcrumbs and mustard. Season with approx. 1 tsp salt and approx. 1⁄2 tsp pepper.

    Form 8 minced steaks from the mixture and wrap each with 1 slice of bacon.

    Heat 1 tablespoon of oil. Fry the minced steaks in it at medium heat on each side for about 6 minutes. Heat 1 tablespoon of oil in a second pan. Fry the chanterelles in it over a high heat. Season with salt and pepper.

    Add the onion and fry. Deglaze with 1⁄8 l water and cream. Bring to the boil and stir in the stock. Thicken sauce with sauce thickener and season with salt and pepper.

    Wash the parsley, cut into strips and stir into the sauce. Serve the minced steaks with it. Mashed potatoes or baguette taste good with it.
