Ingredients

Servings: 4
  • 1.2 kg Vine tomatoes
  • 1 fresh garlic bulb or 3-4 garlic cloves
  • 3 TABLESPOONS green and black olives
  • 7-10 Tbsp a little + 3 tablespoons olive oil
  • 7-10 Tbsp Sea salt and pepper
  • 4 Hoof steaks (approx. 180 g each)

Directions

  1. 1

Clean and wash the tomatoes and cut them in half or quarters depending on size. Cut fresh garlic bulb in half (peel garlic cloves).

  2. 2

Place the tomatoes, garlic and olives in the oiled fat pan of the oven or a large flat roasting pan. Drizzle 2 tablespoons of oil over it. Season with salt and pepper. Braise in the hot oven (electric cooker: 200°C/circulating air: 175°C/gas: level 3) for about 40 minutes.

  3. 3

Dab hoof steaks dry. Fry in 1 tbsp. hot oil on each side for approx. 2 minutes. Season with salt and pepper. Put the steaks on the tomatoes and fry everything else for about 5 minutes. Serve. Crispy baguette tastes good with it.
