Bring 200 ml of water to the boil with 1 tablespoon of oil and 1 teaspoon of salt, remove from the heat and stir in the couscous. Leave to swell for 4 minutes. Pour onto a sieve and drain. Wash and clean the cucumber and dice it roughly.
Wash and clean the tomatoes and cut them into pieces. Peel and roughly dice the onions. Wash parsley and chop coarsely, except for a little bit for garnishing. Mix lemon juice, salt, pepper and sugar, fold in 4 tablespoons of oil.
Mix cucumber, tomatoes, onions, parsley and couscous, fold in marinade. Let the salad steep for about 20 minutes. In the meantime heat 1 tablespoon of oil in a pan. Fry the minced meat in it in pieces. Season with salt, pepper, cinnamon and cumin.
Fold the minced meat into the salad, arrange on plates and garnish with lemon wedges and parsley. Yoghurt tastes good with it.
