Spaghetti with braised tomatoes

Ingredients

Servings: 4
  • 400 g Spaghetti
  • 7-10 Tbsp Salt
  • 1 Garlic clove
  • 2 TEASPOONS Capers
  • 400 g yellow and red cherry tomatoes
  • 2 TABLESPOONS Oil
  • 200 ml Vegetable broth
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 1 bunch of rocket
  • 75 g Parmesan cheese

Directions

    Cook the pasta in boiling salted water according to the instructions on the packet. Peel garlic. Chop garlic and capers. Wash tomatoes and pat dry. Heat oil in a frying pan. Fry the tomatoes for 1-2 minutes while turning.

    Add garlic, capers and stock, simmer for 1-2 minutes, season with salt, pepper and sugar. Clean, wash, drain and chop the rocket. Slice parmesan. Drain the pasta, let it drain and put it back into the pot.

    Mix the braised tomatoes, rocket and about half of the parmesan into the pasta. Serve the pasta, sprinkle with the rest of the parmesan.
