Penne with salmon and rocket

Ingredients

Servings: 4
  • 7-10 Tbsp Salt
  • 250 g Fresh cream
  • 7-10 Tbsp Pepper
  • 2-3 TABLESPOONS Lemon juice
  • 300 g Noodles (e.g. penne)
  • 400 g Salmon fillet (without skin)
  • 100 g Rocket
  • 125 g frozen peas

Directions

    Bring 3-4 litres of salted water to the boil in a large pot. Mix crème fraîche and lemon juice, season with salt and pepper. Add the pasta to the boiling salted water and cook according to the instructions on the packet.

    In the meantime, wash the fish, dab dry and cut into cubes. Clean the rocket, wash it and let it drain well. 2 minutes before the end of the cooking time, pour 150 ml pasta water into a ladle. Add peas to the noodles.

    Pour the noodles and peas into a sieve, quench and drain. Put measured noodle water back into the pot, heat it up, add fish and let it simmer for about 2 minutes at low heat. Add crème fraîche, noodles and rocket, mix, heat up again and season with salt and pepper.

    Arrange in a pot.
