Mafaldine with broccoli and meatballs

Ingredients

Servings: 4
  • 7-10 Tbsp Salt
  • 500 g Broccoli
  • 1–2 Garlic cloves
  • 300 g Noodles (e.g. Mafaldine)
  • 500 g ripe tomatoes
  • 3 fine unboiled veal sausages (à approx. 100 g)
  • 4 TABLESPOONS Olive oil
  • 30 g Capers (glass, mild-spicy pickled)
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sweet peppers
  • 50 g grated parmesan cheese

Directions

    Bring 3-4 litres of salted water to the boil in a saucepan. In the meantime clean and wash the broccoli and cut the florets from the stems. Peel garlic and chop finely. Add the pasta to the boiling salted water and cook according to the instructions on the packet.

    Meanwhile wash the tomatoes and dice them roughly. Add the broccoli 3-4 minutes before the pasta is done. Press the meatballs directly from the intestine as small balls into the pasta water and cook until the end.

    Remove 100 ml of pasta water with a ladle. Pour pasta into a sieve, drain well. In the meantime heat oil in the pasta pot, add tomatoes and garlic, sauté briefly, add pasta water and capers.

    Season with salt, pepper and paprika. Add pasta, broccoli and meatballs and heat. Mix in 40 g parmesan. Serve sprinkled with the rest of the Parmesan.
