Drain the gherkins and cut them in half lengthwise. Put tomato peppers in a sieve and drain. Remove the skin from the sausage, cut in half lengthwise and cut into slices of about 1 cm thickness. Cut cheese into strips. Peel onion and cut into fine rings.
Mix mayonnaise, yoghurt and vinegar. Season to taste with salt and pepper. Mix sausage, cheese, cucumber and paprika and fold in sauce. Garnish with onion rings and parsley
