Roast the spelt and oat flakes in a pan without fat. Sprinkle with brown sugar and allow to caramelize. Spread it on a lightly oil-coated aluminium foil and let it cool down.
In the meantime wash, clean, halve or quarter the strawberries. Mix quark, yoghurt and vanillin sugar. Fold in strawberries. Serve decorated with crunchy flakes and a blossom.
