Boil up the milk with the cinnamon stick, vanilla pulp and 1 pinch of salt. Add rice and let it swell for about 1 1/4 hours at low heat. Stir from time to time. In the meantime, clean and wash the strawberries and cut them into quarters or halves depending on size.
Put 4 pieces aside for garnishing. Wash and halve the nectarines, remove the core and cut into slices. Heat the juice with lemon slices. Sprinkle with Diät-Bindefix, bring to the boil. Remove from the heat.
Fold in the fruit, let it stand for a short time. Season to taste with sweetener and some lemon juice. Let it cool down. Beat the egg white until stiff. Fold into the rice pudding. Season with sweetener and possibly some cinnamon.
Arrange hot rice in the cold dish. Serve decorated with halved strawberries and lemon balm.
