Strawberry flash ice cream with crunchy chocolate topping

Ingredients

  • 300 g frozen strawberries
  • 75 g Icing sugar
  • 200 g Whipped cream
  • 1 TABLESPOON Pistachio kernels
  • 50 g Dark chocolate

Directions

    Place the frozen strawberries and icing sugar in a tall mixing bowl or shaker and allow to thaw for 10-20 minutes.

    Pour in the cream and blend slowly until creamy with a hand blender or in a mixer. If the strawberries are still too hard to puree, add more.

    Let thaw for 2-3 minutes. Cover and freeze the strawberry ice cream for about 10 minutes.

    Meanwhile, chop some pistachios. For the chocolate topping, break the chocolate into pieces and melt in a hot water bath. Let it cool down for about 5 minutes.

    Cut 4 large balls out of the strawberry ice cream with an ice cream scoop and serve. Immediately pour some liquid chocolate over each ball and sprinkle with pistachios. Allow the chocolate coating to set, then serve.
