  • 750 g cream quark (40 % fat)
  • 200 g Whipped cream
  • 200 g white couverture
  • 20 g Coconut oil
  • 7-10 Tbsp red food colouring
  • 7-10 Tbsp sugar pearls
  • 7-10 Tbsp Grease

Directions

  1. 1

Mix flour, 75 g sugar, vanillin sugar and baking powder in a bowl. Add 100 g butter in pieces and 1 egg. Knead first with the dough hooks of the hand mixer, then with your hands to a smooth dough. Put the dough into a greased square springform pan (approx. 24 x 24 cm) and press it to a flat bottom with your hands. Place the mould in a cool place for approx. 30 minutes

  2. 2

Wash and clean 400 g strawberries. Puree 250 g strawberries with 2 tbsp. sugar, cut the rest into small cubes. Put 1 tsp. pudding powder in a bowl, stir gradually with strawberry puree until smooth. Mix the strawberry cubes into the strawberry puree

  3. 3

Mix 100 g butter and 200 g sugar with the whisk of the hand mixer until smooth. Stir in 3 eggs one after the other. Stir in the quark and the rest of the pudding powder as well. Whip cream until stiff, fold into the quark mixture. Spread the quark mixture on the base. Spread the strawberry puree in patches. Marble lightly with a fork. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) on the lower shelf for approx. 1 hour

  4. 4

Wash 200 g strawberries, dab dry well. Chop the chocolate coating, carefully melt with coconut oil over a warm water bath. Colour about half of the couverture with food colouring. Dip the strawberries into the chocolate coating and draw strips with the pink chocolate coating over the still moist chocolate coating. Sprinkle with sugar pearls as desired. Leave to dry. Leave the cheesecake to cool for about 10 minutes in a switched-off oven with the door slightly open. Let it cool down on a cake rack. Cut into pieces and decorate with the chocolate strawberries
