Bring milk, sugar, lemon peel, salt and fat to the boil. Sprinkle in semolina while stirring and bring to the boil. Cover and allow to swell. Remove lemon peel. Separate the egg, stir the egg yolk into the semolina.
Beat the egg white until stiff and fold in. Wash, clean and halve the strawberries. Arrange on plates. Sprinkle with semolina foam and pistachios.
