Ingredients

  • 175 g lactose-free butter
  • 1 pinch Salt
  • 300 g Sugar
  • 4 Eggs (size M)
  • 200 g Flour
  • 50 g Cornstarch
  • 1/2 package Baking Powder
  • 950 g lactose-free whipped cream
  • 500 g lactose-free chocolate
  • 25 g Coconut oil (e.g. palm oil)
  • 1.5 kg Strawberries
  • 1 Vanilla pod
  • 8 sheets white gelatine
  • 750 g lactose-free low-fat curd
  • 250 g lactose-free mascarpone
  • 2 TABLESPOONS lactose-free cocoa powder
  • 7-10 Tbsp Grease

Directions

    Cream fat, salt and 150 g sugar with the whisk of the hand mixer. Stir in the eggs one after the other. Mix flour, starch and baking powder and stir in. Grease the fat pan of the oven (32 x 39 cm). Pour in the dough and smooth it down. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for 20-25 minutes.

    Take out and let cool on a grid. Chop the chocolate. Heat 200 g cream in a saucepan, add 300 g chocolate and coconut fat and melt at low heat while stirring. Remove from the heat and allow to cool slightly while stirring. Wash the strawberries, put some aside for decoration, clean and drain well. Halve the base and place on two large boards. Spread the icing evenly over the cake. Place the strawberries close together. Chill for about 1 hour. In the meantime cut the vanilla pod lengthwise and scrape out the pulp. Soak gelatine in cold water. Mix quark, vanilla pulp, 150 g sugar and mascarpone.

Stir in 3 tablespoons of quark cream, stir into the remaining quark cream. Fold in the cream in portions. Fold in the rest of the chocolate. Spread evenly on the cake, spread loosely and chill for approx. 2 hours. Dust with cocoa and decorate with strawberries put aside

    Squeeze the gelatine and melt. Stir in 3 tablespoons of quark cream, stir into the remaining quark cream. Fold in the cream in portions. Fold in the rest of the chocolate. Spread evenly on the cake, spread loosely and chill for approx. 2 hours. Dust with cocoa and decorate with strawberries put aside
