Peel and finely dice the shallots. Finely dice the gherkins. Wash parsley, shake dry and chop finely. Cut meat into cubes and chop finely. Mix meat and egg yolk.
Season with salt and pepper. Cut the tartar into quarters and fill each of the 4 plates into a ring (9 cm Ø), carefully remove the ring. Sprinkle Tatar with some parsley, half of the shallots and pepper.
Add the gherkins, capers, remaining shallots, remaining parsley and Worchester sauce in small bowls so that everyone can season the tartar themselves. Baguette tastes good with it.
