Peel, wash and roughly grate the carrot. Wash, shake dry and cut into strips. Wash, dry shake and finely chop parsley
Heat the tortilla flat cakes in a hot pan without fat for about 15 seconds on each side, remove. Cover with turkey breast. Spread spring quark on top, leaving the edge free. Spread parsley, carrot and salad on top. Season with pepper
Roll up the flat cake firmly. Keep cold until you eat, wrapped in aluminium foil. Serve with: cherry tomatoes and vegetable sticks (e.g. celery and carrot)
