Spinach noodles with roasted salmon

Ingredients

Servings: 4
  • 1 Onion
  • 2 Garlic cloves
  • 2-3 TABLESPOONS Oil
  • 450 g Frozen leaf spinach
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Nutmeg
  • 400 g Salmon fillet (without skin)
  • 7-10 Tbsp Lemon Pepper
  • 500 g fresh ribbon noodles (cooling shelf)
  • 1 TEASPOON Vegetable broth
  • 4 discs from
  • 1 Organic lemon for garnishing

Directions

    Peel and chop the onion and garlic. Fry in 1 tbsp. hot oil. Add the frozen spinach and 1/4 l water, cover and cook over medium heat for about 15 minutes.

    Boil up plenty of salted water. Wash the salmon, dab dry and cut in half lengthwise. Then cut into small pieces and salt

    Fry salmon in 1-2 tablespoons of hot oil for 1-2 minutes on each side and season with lemon pepper. Cook the noodles in hot salted water for about 2 minutes

    Season spinach with broth, salt, pepper and nutmeg. Drain the noodles. Mix with the spinach. Serve with salmon and garnish with lemon slices
