Peel and finely chop the garlic. Mix with lemon juice, pepper and dried herbs. Whip the oil into it. Wash the fish, dab dry and sprinkle with marinade. Leave to stand for about 30 minutes.
Drain fish well. Grill on the hot grill for 8-10 minutes. Turn occasionally. Garnish as desired with lemon wedges and roasted garlic
