Spicy scrambled eggs

Ingredients

  • 1 clean small red pepper
  • 2 Spring onions
  • 150 g Chorizo (Spanish pepper sausage)
  • 1 TABLESPOON Olive oil
  • 8 Eggs (Gr. M)
  • 4 TABLESPOONS Milk
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper

Directions

    1 small red pepper clean, wash and cut into cubes of about 1 cm. Clean, wash and cut 2 spring onions into rings. Halve 150 g chorizo (Spanish paprika sausage) lengthwise and cut into 2-3 mm thin slices.

    Heat 1 tablespoon of olive oil in a coated frying pan. Fry the sausage for about 6 minutes while turning. After approx. 3 minutes, add the paprika and spring onions and fry. In the meantime whisk 8 eggs (size M) and 4 tbsp. milk with a whisk in a bowl.

    Season with salt and pepper. Add the egg milk to the sausage-paprika mix. As soon as the egg milk begins to set, pull it through the egg mixture with a spatula and let it set over a low heat.
