Clean and wash spring onions and cut them diagonally into fine rings. Mix sauerkraut, spring onions and oil. Season with some crushed chilli and let it stand for about 20 minutes. In the meantime roll up ham firmly and cut into small rolls.
Mix soy sauce and Sambal Oelek. Arrange salad on small plates. Place ham rolls on top and add the sauce. Serve garnished with spring onions or chives.
