Mix honey, ketchup, sambal oelek, salt and pepper. Wash the meat, dab dry and spread with the honey and ketchup marinade. Place on a baking tray and bake in a preheated oven (electric: 200 °C / gas: level 3) for approx. 40 minutes. Turn the ribs halfway through the baking time. In the meantime, drain the pineapple and collect the juice.
Cut pineapple rings into pieces. Peel and finely dice onions. Peel garlic and press it through a garlic press. Wash oregano, dab dry and cut into strips, except for a few leaves for garnishing. Peel and slice bananas and sprinkle with lemon juice. Heat the oil in a pan, fry the onions, almonds and garlic, add the pineapple pieces, oregano, cloves, thyme, pepper, salt, paprika, cayenne pepper and cinnamon stick. Deglaze with tomatoes and pineapple juice and simmer for about 8 minutes at medium heat. Add bananas and cook briefly. sSeason to taste with salt and sugar.
