Spicy ribs with spicy fruit and tomato sauce

Ingredients

  • 50 g Honey
  • 50 g Tomato ketchup
  • 1 TEASPOON Sambal Oelek
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 8 Pork ribs (about 80 g each)
  • 1 jar(s) (236 ml; separation weight: 140 g) Pineapple Rings
  • 2 Onions
  • 3 Garlic cloves
  • 1 potty Oregano
  • 2 Bananas
  • 1 TABLESPOON Lemon juice
  • 2 TABLESPOONS Oil
  • 25 g peeled almonds
  • 1/4 TEASPOON ground cloves
  • 1 TEASPOON dried thyme
  • 7-10 Tbsp Sweet peppers
  • 7-10 Tbsp Cayenne pepper
  • 1 Cinnamon stick
  • 1 package (500 g) chunky tomatoes
  • 7-10 Tbsp Sugar
  • 7-10 Tbsp red and green chillies

Directions

    Mix honey, ketchup, sambal oelek, salt and pepper. Wash the meat, dab dry and spread with the honey and ketchup marinade. Place on a baking tray and bake in a preheated oven (electric: 200 °C / gas: level 3) for approx. 40 minutes. Turn the ribs halfway through the baking time. In the meantime, drain the pineapple and collect the juice.

    Cut pineapple rings into pieces. Peel and finely dice onions. Peel garlic and press it through a garlic press. Wash oregano, dab dry and cut into strips, except for a few leaves for garnishing. Peel and slice bananas and sprinkle with lemon juice. Heat the oil in a pan, fry the onions, almonds and garlic, add the pineapple pieces, oregano, cloves, thyme, pepper, salt, paprika, cayenne pepper and cinnamon stick. Deglaze with tomatoes and pineapple juice and simmer for about 8 minutes at medium heat. Add bananas and cook briefly. sSeason to taste with salt and sugar.

Heat the oil in a pan, fry the onions, almonds and garlic, add the pineapple pieces, oregano, cloves, thyme, pepper, salt, paprika, cayenne pepper and cinnamon stick. Deglaze with tomatoes and pineapple juice and simmer for about 8 minutes at medium heat. Add bananas and cook briefly. sSeason to taste with salt and sugar. Serve the ribs and fruity sauce with the oregano flakes and, if desired, garnished with chillies on a plate
