Spicy paksoi salad with chicken legs

Ingredients

Servings: 4
  • 8 chicken drumsticks (approx. 100 g each), 2 tablespoons oil, salt
  • 7-10 Tbsp Pepper, sweet paprika
  • 2 medium-sized carrots
  • 1 Garlic clove
  • 2 Köpfe Paksoi (ca. 400 g)
  • 2 TABLESPOONS Sesame, 4 tablespoons soy sauce
  • 3-4 Tbsp White wine vinegar
  • 2-3 TABLESPOONS Lemon juice
  • 1 coated Tsp Sambal Oelek
  • 1 TABLESPOON Sesame Oil

Directions

    Wash the legs and pat dry. Season 1 tablespoon of oil with salt, pepper and paprika. Brush the legs with it and put them on a baking tray. Roast in the preheated oven (electric cooker: 200 °C/circulating air: 175 °C/gas: level 3) for approx. 35 minutes

    Peel, wash and cut the carrots into very fine strips. Peel ginger and garlic and chop finely. Clean and wash the paksoi. Cut the stems into strips and the greenery into large pieces. Roast the sesame seeds in a pan without fat, remove

    Fry the stems, carrots, ginger and garlic in 1 tbsp. hot oil for approx. 3 minutes. Add paksoi green, soy sauce, vinegar and lemon juice, remove from heat. Mix well. Season with Sambal Oelek, sesame oil and possibly salt. Cooling

    Take the legs out of the oven. Sprinkle with 1 tsp. sesame seeds. Mix the rest of the sesame seeds and salad. Arrange legs on top. Served with: Asian sauce

    Drink: cool rosé wine
