Spicy marinated mushrooms

Ingredients

Servings: 4
  • 400 g Mushrooms
  • 200 g small tomatoes
  • 1 collar Spring onions
  • 3-4 Tbsp Balsamic vinegar (e.g. white)
  • 7-10 Tbsp salt, pepper, possibly sugar
  • 3-4 Tbsp Oil (e.g. olive oil)
  • 3-4 Stem(s) fresh or 1 tsp dried thyme

Directions

    Clean and possibly wash the mushrooms. Wash tomatoes. Halve or quarter both depending on size. Clean, wash and chop the spring onions

    Mix vinegar, 2-3 tablespoons water, salt, pepper and a little sugar. Beat 2-3 tablespoons of oil into it. Wash the thyme, chop it except for something to garnish and stir it into the marinade

    Heat 1 tablespoon of oil in a frying pan. Fry the mushrooms for 5-8 minutes. Season with salt and pepper. Fry spring onions and tomatoes briefly. Mix vegetables and marinade and let it stand for at least 1 hour

    Finely slice or roughly grate the cheese. Sprinkle vegetables with it. Garnish with remaining thyme. Ciabatta tastes good with it

    Marinate the mushrooms 1-2 days before and keep them covered in the refrigerator. You can also prepare carrots, peppers and zucchini in the same way
