Spicy kale with barley

Ingredients

Servings: 4
  • 1 Bag (1 kg)
  • 7-10 Tbsp cleaned kale
  • 7-10 Tbsp salt, white pepper
  • 1 medium onion
  • 2 Garlic cloves
  • 2-3 TABLESPOONS Oil
  • 2-3 TEASPOONS Curry
  • 7-10 Tbsp ground. Cumin
  • 4 TSP Vegetable broth (instant)
  • 100 g Raisins
  • 125 g Pearl barley
  • 30 g pine nuts or
  • 7-10 Tbsp Almond slivers
  • 7-10 Tbsp Sour cream or
  • 7-10 Tbsp ripened cream

    Sort the kale, pluck from the thick ribs and

    wash. Pre-cook in plenty of boiling salted water in portions for about 3 minutes. Quench, drain and chop roughly. Peel onion and garlic, dice finely

    Heat the oil in a pot. Sauté onion and garlic in it. Add curry and cumin and sauté. Add kale and sauté briefly. Season with salt and pepper. Add 1 l water, bring to the boil and stir in the stock. Wash the raisins and add to the cabbage with the barley. Simmer covered for 25-30 minutes

    Roast pine nuts in a pan without fat until golden brown. Season the kale pot to taste and possibly add a dash of sour cream. Sprinkle pine nuts over it. Goes well with flatbread
